Strong Honey Ale

The initial impression is that of premium ale with fine, almost champagne-like bubbles. The small frothy head soon dies away, but strings of bubbles continue for an hour or so as is typical of bottle fermented products. The colour is a light golden brown. The combination of honey and hops provide an aroma similar to some lighter English ales. On the palate the honey character is there but not overpowering and in balance with the hops. Where the drink stands out is that there is none of the harshness on the back of the palate which is typical of many commercial beers. The finish is smooth, dry and clean, with a pleasant lingering honey after-taste. For the richness of flavour the overall impression is that of a light drink which hides the 8% alcohol.
"All sweet preconceptions vanish on tasting; it’s a refreshing, clean ale without harsh hops or malt aftertaste, and just a hint of honey. Serve it with the chill taken off for a more pronounced honey flavour”.
“Bottle conditioning yields a fine bubble and short-lived head reminiscent of some of the modern European ales (as is the alcohol content of 8 percent). The careful blending of hops and light honey by brewer, Lindsay Bourke, has lead to the production of a fine mellow ale which is very refreshing and clean on the palate, finishing with a pleasant honey aftertaste. This style makes for good drinking at any time but is ideal to go with game, smoked and spicy foods where the honey seems to support rather than fight against the flavours”.

Honey Ale

The lighter alcohol style carries through to the light, refreshing flavour which emphasizes the honey character and relies on the hops more for aroma than for the bitterness found in most ales. The characteristic fine sparkle and light straw colour is reminiscent more of a sparkling wine than a beer.
